Ingredients
2 c.

all-purpose flour

1/4 c.

unsweetened cocoa

1/4 c.

unsweetened black cocoa (we like King Arthur)

1/2 tsp.

baking soda

1/4 tsp.

kosher salt

3/4 c.

unsalted butter

3/4 c.

granulated sugar

1

large egg

2 tsp.

pure vanilla extract

Royal Icing, for decorating

Directions
  1. In medium bowl, whisk together flour, cocoas, baking soda, and salt.
  2. Using electric mixer, beat butter and sugar in large bowl until fluffy, about 3 minutes. Beat in egg, then vanilla. Reduce speed to low and gradually add flour mixture, mi until incorporated.
  3. Shape dough into 2 disks and roll each between 2 sheets of waxed paper to 1/8 inches thick. Chill until firm, 30 minutes in refrigerator or 15 minutes in freezer.
  4. Heat oven to 350°F. Line baking sheets with parchment paper. Using cocoa dusted cookie cutters, cut out cookies. Place on prepared sheets. Reroll, chill, and cut scraps.
  5. Bake, rotating positions of baking sheets halfway through, until cookies are light golden brown around edges, 10 to 12 minutes. Let cool on sheets 5 minutes before transferring to wire racks to cool completely.
  6. Prepare royal icing. Transfer a piping bag fitted with a small round tip, then pipe bones onto each man and let dry.
